UK dairy product production: where is the milk going?

Provisional data from Defra for the year ending March 2016 show UK milk production increased to just under 15bn litres. This was the third consecutive annual increase. This means that, in comparison to the 2013/14 season, the UK had an extra 1.2bn litres to process.

It appears that the additional milk has largely been diverted towards cheese production, absorbing 46% of the extra milk. A further 23% was used for milk powders. Milk used for butter, yogurt and cream also increased, while liquid milk and condensed milk production showed a small decline.
